

Takayama ramen is a local delicacy that is mainly eaten in Takayama City, Gifu Prefecture.
It is said to have started in 1938 when a ramen shop called "Masago Soba" started selling it at a food stall, and it is familiar to locals as "Chuka Soba" or "Soba."
It is characterized by its thin, curly noodles in a lighter Japanese-style soy sauce soup than regular ramen, and the toppings are extremely simple, with roasted pork fillets, bamboo shoots, and chopped green onions. Depending on the store, ramen is served in a unique soy sauce soup based on chicken bones, seafood, vegetables, shiitake mushrooms, and more.
Takayama ramen also has a unique cooking method. Usually, the soup and sauce are made separately, but the soy sauce base and soup are simmered together. The longer it is simmered, the stronger the flavor becomes, so another element of enjoyment is the change in flavor depending on the time of day.
