Gifu Prefecture is famous for a variety of alcoholic drinks, including sake, but today we'll be introducing craft beer.
Gifu Prefecture has pure water that's perfect for brewing beer.
Many river waters and groundwaters in Japan contain only trace amounts of minerals like calcium and magnesium, but the spring water that serves as the tap water source for Gujo Hachiman in Gifu Prefecture is so calcium-rich that it could be said that "mineral water" comes out of the tap.
Making use of this water, Gujo Hachiman produces a craft beer called "Kobokobo." The beers’ taste ranges from tropical to slightly bitter, but overall they have a soft, gentle flavor. There is a brewpub directly above the brewery where the brewmaster himself serves the beer, so you can drink it right where it's brewed.
Other breweries include Hida-no- oku Brewery, located in the town of Furukawa in Hida City, which always has six types of craft beer on tap, including Hida Sansho pepper and fruit beer, and Kamado Brewery in Mizunami City, which is popular for its wide variety of beers made by the founder of beer brewing using natural yeast, as well as Japan's first high-alcohol beer.
Be sure to try and compare the various craft beers that make use of ingredients from each region.
