This pounded rice cake originated with mountain workers in Gifu’s Tono and Hida regions but is now found all over Gifu—it’s usually made by wrapping mashed rice around a skewer and carefully grilling each skewer until the sweet miso and soy sauce-based sauce starts to darken. The sweet and spicy sauce is very fragrant and has a simple and delicious taste.
There are two things about goheimochi that we would like you to pay particular attention to.
The first is its shape. Goheimochi is typically flat and oval in shape (resembling a straw sandal), but there are also a variety of other shapes, such as flattened dumplings or round dumplings.
The other is the sauce. Each store creates its own secret sauce by adding "secret ingredients" such as walnuts, peanuts, or sesame seeds to a soy sauce or miso base.
